The night before :
Wash, wipe the apricots with a clean towel
Remove their seeds
Grate finely the zest of one orange
Squeeze the oranges and the lemon
Put the apricots in a bowl with the orange zest and the citrus juice
Add the sugar. Let this stand overnight.
Mix from time to time so as to let the sugar melt.
The next day :
Pour the preparation in a Jam Pan.
Bring to a Boil.
Count 1 hour for the cooking time.
Stir with a spatula and remove scum frequently.
Towards the end of the cooking period and when the jam thickens, add the almonds.
Continue with the cooking for another 5 minutes.
Away from the heat, let this cool down before pouring in the jars. Then cover with cellophane paper. Remove from heat.
